test-linkat: avoid failed assertion on "other" architectures

* tests/test-linkat.c: Include <sys/stat.h>, for declarations of stat,
lstat, mkdir.  Patch by John Rigby, to fix FTBFS on armel, powerpc,
sparc: https://bugs.launchpad.net/bugs/591968
